Most of the time, planning a party for your friends and family takes a lot of thought and preparation. Some people choose to purchase pre-made party snack food from a supermarket or delicatessen, but there are a few very easy things you can do yourself that will taste great and are quick and easy to make. Here are 3 easy recipes for fast food (it’s interesting fact that the Danish term is Hurtig mad) for your party.


Spicy Chicken Kebabs


Chop up 3 garlic cloves, a cube of fresh ginger, the zest of 1 orange and 3 spring onions and throw them into a blender and make a paste. Add 2 tbsp of orange juice, the same of honey, 1tbsp of soy sauce and 2 tbsp of oil to the paste and mix together. Next cube 4 small chicken breasts and marinade in the mixture for a minimum of an hour, although it is better if you can do this overnight. Throw in some button mushrooms in the last 30 mins. Take some wooden skewers and thread on a cherry tomato, cube of chicken, mushroom and chunk of pepper and repeat until all the chicken is gone. Place the skewers in a frying pan or griddle pan and turn them often, using the left over marinade on them every time you turn them. Once the chicken is browned they should be cooked. Can be served hot or prepared in advance and served cold.


Cheese and Chilli Melts


Put 250g of grated strong cheddar cheese, 4 chopped tomatoes, 1 chopped chilli and ½ a bunch of chopped coriander leaves into a bowl, add a little salt and pepper and mix thoroughly. Place 8 tortillas in a microwave or oven and warm them up until they become flexible. Cover half of each tortilla with the mixture and fold into half moons. Press the edges of the tortilla together to seal them up. Brush the top and bottom of the filled tortilla with a little oil and either place them on a barbeque or a griddle pan for a few mins and then flip them over. Once cooked on both sides, slice them into wedges and place on a platter ready for serving.


Halloumi and Bacon Bites


Preheat the oven to 200o C before starting. Take a 250g block of halloumi cheese and slice into approximately 20 rectangles. Next take 8 slices of smoked streaky bacon and run each slice along the back of a knife to stretch without breaking them. Cut each of the slices in half and sprinkle with freshly ground black pepper and some fresh roughly chopped chives. Next place a rectangle of halloumi cheese in the centre of the bacon and fold the bacon around in a spiral. You can secure these with a tooth pick if they will not stay folded. Place them on a baking sheet and put them into the preheated oven for approximately 12 minutes or until you see the bacon starting to go brown and crispy. This party snack can also be served hot or you can prepare it in advance and serve cold with a dip of your choice.
